1、負責處理廚房的運作及行政事務;

2、執行餐飲經理下達的各項工作任務和工作指示;

4、對廚房的出品、質量和食品成本承擔重要的責任;

5、進入廚房必須按規定著裝，佩戴工作帽，保持儀表、儀容整潔，洗手后上崗工作;

西餐廚師崗位職責2

1、負責協助主理做好出品工作。

2、負責每日的物料食品的領取及廚房開爐打荷切配等工作。

3、負責砧板的廚師每天上班前要檢查冰柜的.用料是否夠用配料是否齊全，有否變味按各種用料的須要來預計用料量，保持食品的新鮮度，生熟食品分開存放。

4、負責汁水的廚師每日要檢查所需的凍熱淚湯汁是否夠量調味是否恰到好處，并密封存放冰箱中。

5、嚴格按順序出菜，時刻注意衛生要求出品質量。

6、對肉類的加工要精細準確，熟悉肉類的配存及保存，對海鮮類要按要求仔細加工。

7、負責廚具的清潔，剩余的食品放回冰柜保存，并把臺面的清潔衛生器具整齊擺放。
